Cheesy Potato and Vegetable Casserole

Serves 2


Ingredients
• 1 tbsp olive oil
• ¼ tsp black pepper
• 1 leek, finely chopped
• 1 red/white onion, finely chopped
• 2 potatoes, peeled and chopped into 2cm cubes
• 1 carrot, peeled and chopped small
• 100g broccoli florets, chopped
• 1 tsp garlic, crushed
• Pinch of nutmeg
• Handful fresh parsley, chopped
• 1 tbsp plain flour
• 120ml milk
• 100g grated cheddar


Method:
1. Preheat oven to 180C
2. Heat oil in a pan, add black pepper, garlic and vegetables. Stir and cook until tender and soft. Season with nutmeg and fresh parsley
3. Add plain flour, stir and cook for 2 minutes before adding milk and some cheese gradually, continuously stirring on low heat to form a creamy vegetable sauce.
4. Pour into an ovenproof dish, sprinkle more cheese, garnish with little parsley and bake for 25mins until bubbling and golden.
