Monster Banana Egg Muffins

Get into the Halloween spirit with these Monster Banana Egg Muffins. This fun, easy and spooky recipe is courtesy of Zia at @what_koa_eats 

Ingredients:

  • 3 eggs
  • 20g washed spinach
  • 2 ripe bananas
  • 1 tsp vanilla extract
  • 1 tsp milk

How to Make: 

  1. Preheat your oven to 200 degrees fan.
  2. Blend your spinach, bananas and milk until smooth.
  3. Whisk the eggs in a bowl and add the blended banana & spinach mixture.
  4. Take a cupcake tray and fill with paper cases or grease holes with a little butter.
  5. Fill the holes to 3/4 full.
  6. Bake for around 20-25 mins or until a skewer comes out clean.

Recipe makes around 6 muffins.
