Potato and Pea Curry

Another yummy weaning recipe from @theflavouracademy which is perfect for your toddler and all the family! 

Serves 4

Ingredients:
• 4 medium potatoes, peeled and chopped into cubes
• 1 red onion
• 1 ½ cups peas, frozen
• 1 tsp mustard seeds
• 1 tsp cumin seeds
• 1 tsp garlic, crushed
• 1 tomato, finely chopped
• 1 tsp turmeric powder
• 1 tsp coriander and cumin powder
• 1 tsp tomato paste
• Approximately 200ml water
• Bunch of fresh coriander
• Salt to taste

Method
1. Heat oil on low heat, gently temper whole spices, add chopped onion and garlic. Sauté and brown onions slightly
2. Add tomato and add ground spices plus tomato paste. Cook for 5 minutes until tomatoes begin to breakdown.
3. Next add potatoes and peas with the addition of water, stir to ensure no sticking to the bottom of the pan.
4. Sprinkle coriander, cover and cook on low for 20 minutes stirring halfway.
5. Uncover and ensure potatoes are cooked, garnish with more coriander and enjoy
